Massaged kale is one of those things I am totally obsessed with for a number of reasons and I’m sure after today you will be too! If you’re not familiar with massaging kale you can learn all about it here.

Reason #1 – It holds up extremely well in the fridge all week long making it a dream for meal prep (what other dressed salad does that?)

Reason #2 – Massaging actually makes it easier for your body to break down and digest the kale which means that you’ll get more nutrition from it.

Reason #3 – Kale is extremely affordable so massaged kale salads are even more budget-friendly than your mixed greens or spinach.

Ok so now that you’re totally into massaged kale let’s talk about a few of my favorite massaged kale salad recipes.

Quinoa Kale Salad AHP 014

Unless you’ve been living under a rock you’ve probably seen this recipe before. It’s my favorite kale salad recipe of all time and I probably make it at least 3x a month. A super simple yet incredibly zesty kale salad that combines the bright flavors of apples and cranberries with quinoa and sunflower seeds to satisfy your taste buds and hunger alike! What more could you want? If you take one thing away from this it’s to go make this salad ASAP!

Steak with Mango Pepita Kale Salad AHP 408

Time to revive an old favorite of ours! We massage kale with lemon, mango and honey and top with pan-seared sirloin steak and pumpkin seeds for a light yet filling salad! You can’t go wrong with this one.

Thai Quinoa and Kale Salad AHP 509

A bright, flavorful salad with Thai-inspired flavors tossed with fluffy quinoa and a bright citrusy vinaigrette for a quick and easy weeknight dinner or prepped-ahead lunch!

Can a dish be both light and decadent? When you combine mustard and pistachio-coated salmon fillets with a zesty and fresh Tuscan kale and apple salad, then the answer is a resounding yes!
