Sun-dried tomatoes are a go-to secret ingredient that I use often to add major depth of flavor to my recipes to make them taste like they’ve been cooking for hours but really they’re ready in under 30. They’re rich, chewy and add a level of umami to any recipe you add them to and I will admit, I am totally obsessed.

I also happened to hop on Facebook Live to share how to DIY your very own SDT at home (hint. they’re super easy to do) and so this week I thought it would be fun to share some of my favorite recipes using the little gems (whether you’re making them yourself or using store-bought). Ok so now that you’re totally into sun-dried tomatoes let’s talk about a few of my favorite AHP recipes using them!

Baked Pasta with Gloucester, Sun-Dried Tomatoes and Kale AHP 211

In fall and winter, baked pastas are a staple chez AHP. We just love the contrast between tender pasta and crispy edges as well as the ability to incorporate so many flavors like cherry and sun-dried tomatoes, wilted baby kale and creamy Double Gloucester cheese in one warming bowl!

Gnocchi with Mushrooms and Sun-Dried Tomatoes AHP 239

We toss fluffy toasted gnocchi, sautéed cremini mushrooms, creamy white beans and wilted baby kale in a buttery garlic sauce and finish with chewy sun-dried tomatoes for a 15-minute fridge-to-table weeknight delight!

Marinated Lentil Salad with Chickpeas AHP 267

Time for a hearty vegetarian main loaded with protein, fiber and tons of flavor! The sun-dried tomatoes, parsley, lemon, and green onion make this salad perfect for lunch or dinner all year round!

Goat Cheese and Spinach Stuffed Pork Chops AHP 348

How many colors can you combine in one dish? We take sun-dried tomatoes, spinach and goat cheese to make a flavorful stuffing for our pork chops before serving with sweet roasted yams and caramelized lemon for a dinner that both tastes and looks bright!

Lettuce-Wrapped Sloppy Joes AHP 436

The classic sloppy joe. For better or worse, they remind most of us of our childhood but that shouldn’t take away from how delicious they can actually be! For our version, we combine ground beef with bell pepper, zucchini, sun-dried tomatoes, and green onion before wrapping everything up in lettuce cups for the perfect blend of flavor and nostalgia!

As you’re no doubt aware, we love pushing the boundaries of what a steak dinner can be. Steak dinners used to be boring and dependable but why can’t they be exciting and dependable? And if seared skirt steak served with corn, sun-dried tomatoes, feta and basil isn’t exciting, we don’t know what is!
