No matter how busy your weeknight, we believe that everyone has time for a 15-minute meal. And this tasty combo of fajita-style ground beef cooked with tender carrots and broccoli and finished with fresh cilantro and lime only requires one skillet, 15 minutes of cooking and 5 minutes of clean-up. Who says healthy cooking has to be time-consuming?

Ingredients:
3/4 lb Ground Beef
2 heads Broccoli
Fajita Seasoning
1 bunch Cilantro
3 Garlic Cloves
1 Lime (Zest and salt Juice)
1 Shallot
2 Carrots

Pantry:

Olive Oil
Celtic Salt
Red Pepper Flakes
Sesame Oil

Skillet

Directions:

1. Add the beef to a skillet over medium heat with a drizzle of sesame oil and a generous pinch of Celtic Salt and red pepper flakes. Add in the thinly sliced shallot and garlic and cook for 5 minutes, stirring occasionally to brown. Add 1 tbsp of fajita seasoning and stir to combine. Cook for another minute. Transfer to a plate and set aside.

2. Dice the carrots and cut the broccoli into bite-sized pieces and add them into the skillet with another drizzle of sesame oil and pinch of Celtic Salt and red pepper flakes. Cook for 6-7 minutes, stirring occasionally.

3. Once the broccoli and carrots are tender but still have a nice crunch, add the beef back in. Zest in the lime and squeeze in the juice. Roughly chop the cilantro. Remove the skillet from the heat and stir in the cilantro. Taste and adjust seasonings.

4. Finish with a drizzle of olive oil and serve!

Prep Ahead: This dish can be prepped in advance and warmed in a skillet!
