We love zucchini noodles in the AHP test kitchens! They’re not only super fun to eat, but they’re a creative way to add in more veggies into your life. And while they don’t replace noodles they’re equally delicious in their own right. Since summertime is peak season for zucchini, I figured it would be fun to put together a few of my AHP fav’s using these cute little veggie noodles.

Herbed Chicken with Garlic-Infused Zucchini Noodles AHP 450

When is pasta not pasta? When it’s zucchini noodles! We toss our light and tender noodles in a garlic-infused sauce before serving with fresh tomatoes and crispy herbed chicken thighs for the paleo “pasta” dish you’ve always wanted!


Thai Pork Curry with Zucchini Ribbons AHP 193

Curry powder is one of the oldest and most widely-used spice blends in the world, particularly when it comes to South Asian cuisine. In this recipe, we take pork loin chops and stew them in Thai coconut milk and curry powder until juicy and tender before adding in fresh ginger and bell pepper and serving over zucchini ribbons with fresh cilantro and lime. Colorful, exotic and delicious!
